Sushi

427.  Sushi is such a delight.  It is savory flavors coming together on your pallet exploding with surprising nuances. Salty, smooth, cold, crunchy, textures popping with spicy, tangy, toasted, yummy experiences.  Some would say "fishy" too but, that depends on the seafood that you use.  Of course, raw fish is involved but the health factor far outweighs the off-putting thought of "raw fish".  Once I tried sushi,  I always walk away satisfied.

We have our favorite rolls and favorite restaurants that serve sushi, but, I decided to make sushi at home.  I purchased a sushi kit, which you can find them at William Sonoma online here.  And, it comes with instructions that are so easy to follow.

I purchased fresh water salmon and sliced it paper thin, toasted sesame seeds, sliced an avocado, julienned cucumber, sautéed shrimp and cut it into chunks, cream cheese pieces, mango sliced thin, coated onion slices with egg and flour and fried them in hot oil till crispy.  I also found black caviar and made sticky rice.

And then we started the process.  It took a couple tries accomplishing the rolling and tucking skill, but, we each gave it a go.

We also made spicy mayo and pickled ginger, my recipe here.  And who could forget wasabi!!
What a pleasant surprise and we ate sushi for hours.  Some rolls were with seaweed outside and others with seaweed inside and rice on the outside which was tricky.

I also made nigiri with the extra salmon, shmear of wasabi and rice.  More reasons to say yum!
What a great experience and delightful dinner!  So, no, it was not expert quality but it satisfied.  I will leave that to the masters!
If you web search "Sushi" you will be amazed how many recipes, hints, tutorials and videos you will find. My favorite go-to is on PBS and my rice turns out perfect every time.  PBS Sushi Watch Here

Summer Salad Bowls

419.  When it is hot outside and you have worked a long day, the last thing I am looking for is a heavy carbohydrate meal with red meat.  The thought of a cool, crisp salad with yummy toppings fills me up and satisfies my hunger.

I am enjoying the packaged salad mixes that you can find in stores.  They range from iceberg lettuce for a Caesar salad to a ZaTara salad mix from Trader Joes.  I elevate the salad and make it into a meal by adding proteins, vegetables, seeds, nuts, fruits and cheeses.

In this salad pictured, I broiled a breast of chicken that I butterflied and seasoned with salt, pepper, paprika and garlic salt.  While that was roasting I lined up my bowls, emptied a bag of Sweet Kale salad mix with cabbage. I added sliced cucumbers, red cabbage shredded, spring onions, and Monterey Jack shredded cheese.  In a separate bowl I steamed a cup of green beans, drained them and added olive oil, salt and pepper to taste.  I sprinkled salt and ground black pepper over the salad then drizzled it with olive oil.
Once my chicken was roasted, I sliced it and laid it across the top onto the cheese so it would melt.  The finishing touch was to add a scoop of the cool seasoned green beans and empty the packets that accompany the salad.  This particular salad comes with a poppy seed dressing, pumpkin seeds and dried cranberries.  Perfection!  So cool, crisp, warm chicken and melty cheese with the sweet and savory toppings.
This second Salad Bowl takes on a Southwest flavor.    I started with a piece of fresh salmon, sprinkling it with salt, ground pepper, garlic salt and olive oil.  Broiling salmon is tricky because you can over do the fish easily.  So, I place the pan in a cold oven and turn it on to bake at 400 degrees to be able to monitor the process closer.  The bottom skin will crisp up nicely.
I line up my bowls and add the Southwest salad mix into each bowl, spinach, spring green onions sliced and chopped cilantro. Sprinkle shredded Cheddar Cheese over the salad, salt, ground pepper and drizzle lightly with olive oil.
I make a batch of guacamole or purchased guacamole and several jalapeños sliced with seeds and all.  On this particular salad I had found broccoli bites in the freezer section so I popped those in the oven with the salmon.
Once the salmon is to your liking, remove from the oven, gently remove the skin from the bottom of the fish and place hot onto the cheese.  Place a dollop of guacamole to one side and a dollop of Daisy Sour Cream to the other side.  Toss on the jalapeños hot broccoli bites and the crispy fish skin to the side.  Finally, drizzle the packet of Southwest salad dressing over the fish and onto the salad.  You do not need to mix the salad.  The individual portion will be mixed as you eat.
Now it is your turn.  What combinations will you create?  You could create an Asian salad with dumplings or a Steak Salad with fries.  Use your imagination and see what works.  It's a challenge but so enjoyable.

"Too many simple green salads suffer from a lack of imagination."
~ James Beard

Sushi Bowl

412.  My daughter shared a wonderful twist on sushi.  She took a variety of the components, that can be endless, and created a "Sushi Bowl".  Yes! And the experience was all there, crunchy, spicy, soft, pickled, brain-freezing, delightful, fishy, salty, peanuty.  If you devour sushi, you know all the feels and flavors.

Sometimes, when I am at a sushi bar, the special rolls can be so large, I cannot fit them in my mouth in one bite.  It can be a very embarrassing moment when the item you are placing in your mouth is considerably larger than your actual mouth as you carefully hold this delicacy with two thin pieces of bamboo.  And to deconstruct a roll is so wrong!  You must taste the whole piece to experience the flavor bomb the sushi chef has constructed.   So, having all the flavors I love piled high to take smaller bites of enjoyment.  It was a delight!

Take a brief moment and search "Sushi Bowl" image in your browser and you will be surprised how many
 exist.  Here is my recipe:
This meal was so spectacular and gave me all the feels of sushi.  If you are adventurous and want to take a shot at creating your own sushi bowl, I think you will be pleasantly surprised.
I also had made my own pickled ginger.  It was either sold out or not available in the markets visited.
Here is my recipe for pickled ginger: Pickled Ginger Recipe
I am excited for you to try this recipe.  It will make you happy, I promise!

Zucchini Noodles with Pesto

393.  While cutting back on bread intake, I'm adjusting and adapting recipes.  As the saying goes, "Necessity is the mother of invention", and it was necessary to find a replacement for pasta.
So with all the recipes using squash as a replacement, I wanted to spiralize but due to this quarantine  in place, I can't go to the store.  So, how to create noodles from zucchini?
The idea to use my hand lemon zester came to mind...and it was genius!  Because the zucchini is softer squash, I had to be careful to go slowly with gentle pressure to make long strips.
I sautéd a quarter of a red onion in a pat of butter, then added the zucchini just to heat it up but not to cook it because the noodles would wilt.
I then heated up a bit of pesto recipe here, and pan seared salmon.
I plated the gently warmed zucchini, spooned pesto over the noodles and then place the seared salmon and topped with pesto.  I don't have to say how flavorful and the textures were so very similar to pasta noodles.

The recipe is so delightful, light and satisfying.

The author of this proverb is unknown. It is commonly misattributed to Plato to Benjamin Jowett's popular idiomatic 1871 translation of Plato's Republic, where in Book II, 369c, his translation reads: "The true creator is necessity, who is the mother of our invention."

Pan Seared Salmon

291.  Fresh salmon fillets pan seared in a light panko crumb with fresh parsley.  A dash of lemon squeezed across the top and served sizzling hot on your plate.
This method is a process that makes for quick preparation along with boiled potatoes tossed with butter and fresh dill weed chopped and boiled carrots.  It's light, tasteful, very satisfying.

Purchase several pounds of fresh salmon.  You can be sure your fish is fresh if there is no smell to your fish and it is wet not filmy slimy.
Rinse the salmon, patting dry with paper towels. Cut into steaks.
prepare an egg wash in a shallow bowl.  In a separate shallow bowl place 1 cup panko bread crumbs, salt and pepper, garlic salt, tablespoon of chopped fresh parsley, 1/2 tsp lemon zest.
Heat a skillet with olive oil till sizzling.  Dip each top and bottom of salmon pieces in the egg wash then in the panko breading.  Place coated salmon in hot pan skin side down.  Saute on medium heat till you begin to see the dark pink turn light.
Immediately place under high broiler till crumbs have toasted and center is light pink.
Plate immediately and serve with complimentary sides.  Finish with a squeeze of fresh lemon.
