Enchilada with White Cream Sauce


471.  Enchilada's for dinner is a resourceful meal you can prepare ahead, freeze or take as a great dish.  And, everyone loves them.  Filled with any type of delicious filling whether it be beef ground or shredded, chicken, vegetarian, pork or fruit for a dessert option.  This recipe is simple to follow, just have all your ingredients ready before you begin.  You will make a roux as the base for the cream sauce.  You can find more detail here:  Roux



You will love this recipe and it tastes great the next days reheated or, pop them in the freezer and bake when you need a quick meal.

Mango Salsa

430.  Cool, fresh, satisfying; these words describe fresh-made mango salsa.  When a break is needed from the standard tomato based salsa, fruited salsa is perfect.  Fruits that work well would include mango, peaches, plums, or pears.  When the fruit is softer or more ripe, the sugars develop in the fruit making the sweet/savory balance so much better.

Sushi Bowl

412.  My daughter shared a wonderful twist on sushi.  She took a variety of the components, that can be endless, and created a "Sushi Bowl".  Yes! And the experience was all there, crunchy, spicy, soft, pickled, brain-freezing, delightful, fishy, salty, peanuty.  If you devour sushi, you know all the feels and flavors. 

 Sometimes, when I am at a sushi bar, the special rolls can be so large, I cannot fit them in my mouth in one bite.  It can be a very embarrassing moment when the item you are placing in your mouth is considerably larger than your actual mouth as you carefully hold this delicacy with two thin pieces of bamboo.  And to deconstruct a roll is so wrong!  You must taste the whole piece to experience the flavor bomb the sushi chef has constructed.   So, having all the flavors I love piled high to take smaller bites of enjoyment.  It was a delight!

This meal was so spectacular and gave me all the feels of sushi.  If you are adventurous and want to take a shot at creating your own sushi bowl, I think you will be pleasantly surprised.
I also had made my own pickled ginger.  It was either sold out or not available in the markets visited.

Elote Mexican Street Corn

371.  The other day we grilled ribs and rather than have plain buttered corn we made Elote or Mexican Street Corn.  If you've seen Nacho Libré, Elote corn shows up throughout the movie.  If you've seen the movie, you would remember Nacho's friend Esqueleto who loves Street Corn.  This is a funny scene from the movie:
I mean...corn is simple tasting and always benefits from butter and salt.  But this version brings corn on the cob to a new flavor level.  Lip smacking, juicy, pleasing, buttery, cheesy...yeah, you're going to love it.  We found an original recipe here Elote.
Some chefs like to roast the corn in the husk.  I like the char on the kernels so we roast the shucked corn.  You could place a wooden stick in one end of the cob for easy handling.

Roast the corn for 15 - 20 minutes.  Straight from the grill, rub with butter and Mexican Crema if you have it available or use Mayonnaise.

Next, roll in grated Parmesan Cheese, crumbled Oaxaca Cheese or crumbled Cotija Cheese, a dry Mexican cheese if available. And sprinkle lightly with sea salt, smoked paprika or smoked chili powder and chopped cilantro and squeeze lime over.

Get ready to hear the ooohhh's and ahhhh's at the table.  This corn is a crowd pleaser.  And did I say doable?  Add this recipe to your summer cookout menu.

Chicken Thighs in Lime Cilantro Black Bean Rice

363. Ok...let me just say, there are times I get agitated with the pop-up ads or never ending recipe ads that accost you while scrolling on your social media.  But yesterday...I stopped...I watched...I made note...and I saved this recipe!!!  It was a buzzfeedtasty post on Instagram.  I not only saved it...I made it!!!

 I followed the recipe but added a few ingredients to my taste.     I was a bit disappointed with my chicken skins that stuck to the bottom of the dutch oven.  Remember to blot your chicken and make sure the skin is dry before adding to the pot.  I also used Basmati Rice which adds so much flavor and fluffs up beautifully!

The chicken skins were so crispy and flavorful and this rice, can I say we didn't want to stop eating it!

Fish Tacos

319.  Today was a "craving day" for Fish Tacos.  I just had to have them!!!

Here is my process and I must say, this recipe was flavorful, memorable and one to come back to time after time.




I also made sides of refried beans and Spanish rice to accompany the tacos.
 Condiments were chopped cabbage and radishes,  my homemade salsa, scallion, red onion and limes and sour cream.  Delicious!!
